I have a 4127 Motorad T-Stat which is rated at 176 degrees -
Is this consider the 180 T-Stat I keep reading?
or the 4128 which is rated at 185 degrees is the " 180 T-Stat?"

yea 180 is a 180. you can get the jett 180 thermo that opens right at 180 and comes with a new gasket. or you can buy another brands but most have been found to open a little over 180 for some reason.
